In 2012, the common theme of our presentations at InterFace AG is:
Living (and surviving) in a sustainable way.
Frau Susanne Hofmann of the Tölzer Kasladen will talk about it on June, 21st at the IF Forum. Her presentation will be titled:
Quality beats Quantity.
How well food should be made.
Here is the vita of Frau Hofmann:
Even at the early age of eleven, everything pointed towards cheese becoming Susanne Hofmann’s vocation and calling. Asked by the then most famous French cheese expert, she was able to name all the cheese brands on the cheese card.
In 1972, the Hofmann family founded the „Tölzer Kasladen“, in 1984 (incidentally, that is also the year InterFace AG was founded), Frau Hofmann opened her own branch on the Munich Viktualienmarkt.
Today, she and her brother are the heads of the Tölzer Kasladen. In several shops, they offer more than a hundred and fifty high-quality cheese brands produced in the best manner of the craft. They are refined in their own seasoning department.
Among the buyers are the European top gastronomic enterprises, the cruiser „MS Europa“ and many events. She is one of the few women who are members of the French Cheese Guild and was knighted in 1997, being awarded the title „Maître Fromager“.
Her presentation will be structured as follows:
- Where traditional cheese began;
- Its development until today;
- How to relish it in a sustainable way and
- A criticism of industrial food production
Frau Hofmann accompanies numerous quality control procedures for cheese in Switzerland, France and Germany and is the director of the cheese academy. Each year, she organizes the Bad Tölz cheese festival, which was originally introduced by her.
